The Salice Salentino is one of the most known Apulian wines, one of the first to leave the region, and is another wine in which the Negroamaro is the main grape, even though, in this case, it is the only grape. The Salice Salentino appellation does not require any ageing however, in this case, it undergoes a short period, just to add that extra bit to the wine. Like all Negroamaro based wines, the wine has a big fruity nose, and on the palate, is smooth, soft and full and matches perfectly southern rich dishes.
