Ruby chocolate, like the name says, is a ruby coloured chocolate, but not because artificial colouring is used. The pink colour comes from the cocoa beans used, they are red and during the roasting process, the cocoa obtained becomes pink.
Ruby chocolate not only has a different colour but also a different taste compared to all other chocolates. Ruby chocolate has plenty of fruity notes and a fresh and zingy taste.
This artisan ruby chocolate, with higher cocoa content than commercial chocolate, has even more intense flavours, slightly tart, rich and wonderfully smooth.
The artisan who made it
Tradition and quality, these are the words that best sum up the history of Boella & Sorrisi, the result of a marriage between two of the oldest Piedmont chocolatiers. Boella goes back to 1885 whilst Sorrisi was established in the late 1950s.
